Revolucion, El Toro Chino chefs to cook for ‘Open Flame’ 2018 debut

While you’re busy making reservations for Mother’s Day this Sunday, you might want to get mom a seat at the 2018 debut of “Open Flame” under American Propane’s cabana to show her how much you care.
The opener has been rescheduled due to fire danger and will now launch at 6 p.m. May 17 with a South of the Border celebration of pork.
Chef Miguel Barrera, whom you read about in these pages a couple of weeks ago in a story about Revolucion, will be on hand to prepare the Cochinita Pibil tostadas. Cochinita Pibil starts with a large pork roast that is marinated in citrus, achiote, red chile, garlic, herbs and spice then wrapped in banana leaves and slow-roasted until fork tender.
Chefs Gerry Reardon and Klaudya Barcenas of El Toro Chino in Norman will serve Carnitas and Tres Leches cupcakes. Traditional carnitas are made from pork braised in its own rendered fat until it falls apart then flash fried before its shredded for texture. Tres Leches cake is sponge cake soaked in evaporated milk, sweetened condensed milk, and heavy cream.
For my dish, I will present a variation on Tacos al Pastor, the dish traditionally made of spit-roasted pork marinated in pineapple and red chile. I will make a version with pork tenderloin requiring neither a vertical roaster nor a miniature machete and served on tortillas or bread.

Black Cat prowling Delmar Gardens
Chef Beth Lyon launched her new food trailer Black Cat on Saturday at Delmar Gardens, 1225 SW 2 St.
The Coach House Apprenticeship Program graduate and veteran of Kitchen No. 324, The Mule and Provision Kitchen is serving what she calls “mindful nourishment.”
That includes tacos, burgers, sandwiches and favorites like biscuits and gravy. Lyon steers her versions of street food favorites away from gutbomb territory to delivery, delicious, health-conscious food made from locally raised ingredients.
She also offers a terrific selection of vegan items. Black Cat will be at Delmar Gardens, which sits in the farmers market complex next-door to Urban Agrarian, throughout the month of May.
Craft Beer Week coming
Oklahoma brewers and Oak & Ore will observe American Craft Beer week, beginning May 14, with four days of special releases created and brewed in collaboration with Prairie Artisan Ales OKC, Elk Valley Brewing Company, Roughtail Brewing Company, and Stonecloud Brewing Company.
“2018 is a very special year for Oklahoma brewers,” said Micah Andrews, owner of Oak & Ore.
“With recent changes and new laws going into effect this October, our state is primed to become nationally recognized as a great home for brewing. We already have an incredible roster of breweries, and there are plenty more on the way. American Craft Beer Week is a good time to appreciate where we are, how far we’ve come, and where we’re going.”
