Convenient­ly located in Central Maui, Cafe O’Lei at the Dunes expansive at Maui Lani will be jumping from 9 a.m. to 2 p.m. Easter Sunday with an all-you-can-eat brunch buffet.

Chefs will roast prime rib of beef and serve with au jus and creamed horseradis­h, and they will hand-carve roast leg of lamb stuffed with spinach and goat cheese and drizzled in rosemary jus.

Other hot highlights are jumbo shrimp linguine with Roma tomatoes, basil, garlic and cream; lightly blackened mahimahi with fresh papaya salsa and ginger butter; mac-nut breast of chicken in lemon-caper butter sauce; and honey-mac-nut roast pork with caramelize­d onion mashed potatoes or steamed rice.

Made-to-order omelets and a specialty salad station add to the feast. Desserts such as Bananas Foster with ice cream, chocolate fondue, pineapple upside-down cake and apple mango cobbler remain annual crowd pleasers. Cost is $39 per adult and $19 for children 4 to 12. in Waikapu from 10 a.m. to 1 p.m. and bring your appetites for the all-you-can-eat repast.

Enjoy an array of fresh garden salads, hot-cross buns, freshly baked croissants, seafood display of ahi poke, snow crab legs and poached tiger shrimp and chef’s omelet station.

Kahili Executive Chef Eddie Munoz will dazzle with seafood on ice featuring poached tiger shrimp and ahi poke, and a salad bar with creamy Caesar Romaine, fresh grilled vegetables, Caprese salad and red-skin potato salad.

Hot entrees are roasted leg of lamb with rosemary-mint jus, mac-nut chicken breast in beurre noisette, five-peppercorn crusted salmon, oven-roasted prime rib and cooked-to order omelets along with a host of desserts and beverages. Feast on the all-you-can-enjoy buffet of hand-carved prime rib, leg of lamb with rosemary crust, house-smoked salmon, peel-and-eat shrimp with kimchi cocktail sauce, hearts-of-palm salad and domestic cheese board items.

A keiki buffet will delight with pizza, hot dogs, cookies, Jell-O and ice cream with toppings. For adults, Executive Chef Tom Muromoto has crafted an award-winning menu of fresh seafood, including ahi shoyu poke and raw crab poke along with pork laulau, slow-roasted beef strip loin and other local favorites. The seafood display table glistens with Pacific Coast oysters, snow crab, Gulf shrimp and ahi poke in coconut shells. Cold items are imported and local cheeses, foie gras brulee, hamachi and California sushi rolls, deviled eggs, spring vegetable crudite, heirloom tomato salad, artisanal charcuteri­e and breads and antipasti.
