Diplomat Resort & Spa rebrands restaurant with new burger spot

This new burger spot on the Intracoast­al Waterway marks the beginning of a restaurant re-branding on the Diplomat Resort & Spa’s property.

Bristol’s has replaced Rivals Waterfront Sports Grille in Diplomat Landing across the street from the resort.

“Our $100 million transforma­tion at the resort will mean incredible things for dining in Hollywood,” says Ed Walls, the resort’s general manager. “Our property is truly iconic, and continuing this legacy starts with the restaurant­s.”

Oval-shaped burgers on house-made sub rolls ($15) include the Porter Barbeque with griddled onions, Monterey Jack and house-made pickles and the vegan toasted quinoa with hummus and shiitake mushroom salad. Gluten-free rolls are available.

Other highlights include three renditions of wedge salads ($10-$12) and mini Chicago-style hot dogs ($8).

Cocktails ($9) are retro-inspired, such as Build A Mule with choice of spirit.

Spiked milkshakes ($11) crafted from house-made ice cream include the Southern Belle with bourbon, while the Lunch Box with peanut butter and jelly is one of the non-alcoholic versions ($8).

Nightly dinner and weekend lunch are served amid a sleek, industrial ambience with a concrete floor, reclaimed wood tables and red leather booths, plus a covered patio.
