Larry’s Market Shrimp Salad

- Makes 6 servings Shrimp mixture: Dressing: LARRY'S MARKET

1 1⁄2 pounds cooked shrimp (41 to 50 count; see note)

1⁄2 cup finely diced celery

3 green onions, thinly sliced

1⁄2 red bell pepper, diced small 1⁄4 cup mayonnaise

1/3 cup sour cream

1 teaspoon lemon Juice

1 teaspoon white pepper

Dash of hot pepper sauce

Dash of Old Bay Seasoning

Salt to taste

In a medium bowl, toss shrimp, celery, green onion, and bell pepper.

In a small bowl, mix together mayonnaise, sour cream, lemon juice, pepper, hot sauce, Old Bay seasoning and salt.

Fold dressing into shrimp mixture. Taste and adjust seasonings and serve over greens or use to make sandwiches.

Note: If using raw shrimp, cook them in boiling water with a few cut lemons and a small bunch of fresh tarragon. Discard lemon and tarragon and chill before using.
