Observed person in charge (PIC) was not knowledgeable about duties. Observed severe buildup on pans, tables and other utensils. Instructed the (PIC) to clean with more frequency. Observed PIC
was not knowledgeable of the five (5) reportable illnesses at time of inspection. Educated PIC on the five reportable illnesses by providing information. Observed several food items such as salmon, tuna and freshwater eel not at proper cold holding temperature ranging from 45-50° Fahrenheit at time of inspection. Instructed the PIC to start time stamping food items. Observed noodles and packed salads without proper time or date marking at time of inspection. Instructed the PIC to label containers with dates in order to ensure public safety. Observed no consumer advisory on menus at time of inspection. Instructed the PIC to post a sign in the facility. Observed reach-in cooler door seal not properly intact at time of inspection. Instructed the PIC to replace seal and send copy of invoice through email. Observed sanitation bucket testing at 200 ppm of chlorine or above at time of inspection. Corrected on site by tossing out water and retesting at 100 ppm. Observed dishwasher not dispensing sanitizer at time of inspection. Instructed the PIC to stop using dishwasher until repairs have been made.
