Simple Easter decorated biscuits

“These delicious buttery biscuits are super easy to make. You can make them different shapes and sizes and get creative with the decoration.”

Makes:12 Prep: 20 mins (+ chilling time) Cook: 10 mins

125g (5oz) butter, softened 125g(5oz) caster sugar 1 medium egg, beaten ½ tsp vanilla extract 290g (12oz) plain flour 250g (12oz) royal icing Assorted food colouring

1 Pre-heat oven to 180°C/ 160°C Fan/Gas Mark 4.

2. Place the butter in a large mixing bowl with the caster sugar. Beat until light and fluffy. Gradually beat in the egg, add the vanilla extract then gradually add the flour.

3. Bring the mixture together to a stiff dough. Gather into a ball, flatten, wrap up and chill for 30 mins.

4. Roll the dough out on a work surface lightly dusted with flour until it’s around the thickness of a £1 coin. Using Easterthem­ed cutters (if you have them), cut out the biscuits.

5. Line 2 large trays with baking parchment, place the cut-out shapes on them and bake for 8-10 mins, depending on size, until just golden brown.

6. Allow to cool and firm up before transferri­ng to a cooling rack to cool completely.

7. To decorate, make up the icing as directed on the packet. Divide equally between different bowls, depending on how many colours you’re using, adding a little food colouring to each bowl. Place the mixture into piping bags, or just spoon it on and decorate biscuits with the icing. Per serving: 300 cals, 9g fat (6g sat fat), 31g sugar, 0.2g salt
