HOW WE TESTED Our GHI experts cooked three staple dishes in each wok: a meat dish, a fried rice dish and a vegetable stir-fry with a sticky sauce. They tried each on gas, electric and induction hobs, and measured how long they took to heat up. To test non-stick claims, they used little and no oil and noted any sticking or burning. Those that claimed to be dishwasher-safe were put through 15 cycles and assessed for any signs of damage. Oven-safe woks were also tested at the manufacturer’s highest suggested temperature.
