Celebrity chef Bruno Menard pops in to Tables Grill
Michelin-starred French celebrity chef Bruno Menard will showcase his cooking dexterity and creativity in Bangkok during an exclusive, three-day pop-up at Tables Grill restaurant of Grand Hyatt Erawan Bangkok from March 14-16.
Menard is the chef-patron of the classic French cuisine restaurant L’Osier in Tokyo, which was awarded three stars by the Michelin Guide in 2008. The illustrious and energetic chef is one of the three judges on the cooking-competition show MasterChef Asia, launched in 2015.
Growing up in a family with various culinary interests and profound cooking passion (his father is a pioneering chocolatier; his brothers are pastry chefs; his grandfather’s a butcher), Menard accumulated experience at a very young age. He was once recognised as one of France’s most promising young chefs.
Menard had built his expertise by training under several world-famous chefs at prestigious culinary establishments around the world. In 2002, his restaurant the Dining Room at the Ritz Carlton Buckhead in Atlanta, received five stars by the Mobil Travel Guide and five diamonds by the American Automobile Association.
Menard took over the kitchen of L’Osier in Tokyo’s Ginza district in 2007 and a year later, the restaurant received three Michelin stars — the first time a restaurant was awarded top honour on its first rating.
Permanently settling in Asia, he opened a culinary consulting firm in Singapore in 2013. Two years later, he was nominated as Bocuse d’Or President for Singapore by the Bocuse d’Or International Organization Committee.
During his evenings in Bangkok, the globally-acclaimed Menard will cook up exclusive seven-course meals, an exhibition of neoclassic French fare with an Asian touch, to be complemented by fine French wines from the Bruno Paillard winery in Champagne Riemes. The French haute cuisine dinner will feature, for example, chilli crab with yuzu koshio cream; poached langoustine with kaluga green caviar nori and pistachio pesto; butternut squash cappuccino and green cardamom; lightlypoached Tasmanian trout with macadamia nut purée, salted praline and citrus gel; French duck with orange-miso coating, carrot-lime flan and mushroom parcels; and apple-pineapple tart with ginger candy caramel and white chocolate.
The event is organised by Elegant Journeys, a fresh-faced company specialising in fine-dining and luxury-lifestyle events.
The exclusive seven-course dinner by Bruno Menard will be held from March 14-16 at 7pm, Tables Grill, Grand Hyatt Erawan Bangkok. Prices are 13,900 baht net per person with wine pairing, or 11,900 baht net per person without wine.
