This sophistica­ted-looking pan strikes a good balance between performanc­e and speed. It provided good heat distributi­on, even cooking and consistent results across the board. The pan has a highqualit­y feel from the moment you pick it up. It can handle robust tasks, and was one of the quickest to heat up in our tests. It offered rapid cooking and superb searing. In our tests, it braised onion and seared red meat and chicken evenly, with good browning, and foods were cooked through within the time tested. Vegetables came out tender yet crunchy. Simmering was steady, so the Bolognese sauce cooked to a beautiful texture. The pan is solid and perfectly balanced but a little on the heavy side, so you notice its weight when filled. It has a thick handle, feels durable in the hand and sits balanced on the stovetop. The non-stick coating is effective, making for easy cleaning. This pan is great for searing and the one you’ll be reaching for the most, making it your go-to pan for almost every meal. VERDICT: A robust pan that’s a good size and a well-balanced heft. A great all-rounder.

A versatile pan that looks great, performs exceptiona­lly and offers excellent value for money. We were impressed with its non-stick coating and excellent spread of heat. It gave a good overall performanc­e in our tests. Although it was one of the slowest pans to heat up and cook foods through, cooking and browning were even. In our tests, it seared red meat and chicken beautifull­y, with perfect browning, but needed a longer cooking time. Onion browned evenly but was a bit lighter than what some of the other pans produced within the time tested. This pan is great for stews and sauces; it offered a steady simmer and good heat distributi­on, and the steep sides prevented splatterin­g. The Bolognese sauce cooked to a nice consistenc­y and thickness, but it took longer to reduce the liquid than in some of the other pans. Its non-stick coating was impressive on all our tests, and any leftover residue rinsed off quickly. This pan is very well constructe­d with a good weight for its large size; and its comfortabl­e handles were particular­ly helpful when lifting and moving the pan around. VERDICT: A versatile pan that’s a good size for cooking for a large family.

If you want to get dinner on the table as quick as possible, this pan is the pick of the bunch. Made of stainless steel, it responded rapidly to temperatur­e changes and conducted heat evenly. It cooked and browned foods in the fastest time in our tests. Red meat and poultry browned to perfection, and the chicken had a lovely crisp skin, but we found that certain foods were browned without being cooked through if the heat was too high. We cooked vegetables over low heat, and they were beautifull­y cooked, with a good texture. The Bolognese sauce simmered quickly, reducing the liquid speedily and producing a nice thick texture, but it required a watchful eye to prevent burning. This pan has an excellent spread of heat and is ideal for fast cooking and searing, but you have to monitor the temperatur­e and keep an eye on the food. The lid has no steam vent, so it gets messy when droplets splatter. It was the lightest of the pans we tested, which made for comfortabl­e handling. Cleaning it required a bit of scraping.

VERDICT: Even heat distributi­on, scratch-proof and durable. It’s a good buy.
